The Art of the Restaurateur

Nicholas Lander

Everything you ever wanted to know about the highs and lows of the restaurant business are charted in Nicholas Lander’s The Art of the Restaurateur. Lander was joined by Russell Norman of Polpo restaurants and Jewish-style deli Mishkin’s to discuss what goes into great dining out at the world’s landmark restaurants.

For everyone who’s into food and anyone who has ever dreamed of opening their own restaurant. This was a discussion about cookery, choosing the right chef and deciding what to serve, table service and survival in the restaurant business.

Nicholas Lander interviewed 20 of the world’s top restaurateurs for The Art of the Restaurateur. He writes the 'Restaurant Insider' column for the Financial Times, which he started after running L’Escargot restaurant in London’s Soho during the 1980s.

Russell Norman owns Polpo, Polpetto, Da Polpo, Mishkin’s and many other restaurants in London and is author of Polpo A Venetian Cookbook (Of Sorts).
